  • 350g plain flour
  • 1-2 tsp ground ginger
  • 1 teaspoon bicarbonate of soda
  • 100g butter or margarine
  • 175g soft light brown sugar
  • 1 egg
  • 4 tsp golden syrup


Prep time: 20 min, Cook time:15 min, Serves: 20 biscuits

Preheat the oven to 190 degrees C/ gas mark 5

1. Put the flour, ginger and bicarbonate of soda into a bowl and rub in the butter

2. Add the sugar and stir in the syrup and egg to form a firmer doughy mixture 

3. Roll to about 5mm thick and cut with cutters or with a knife if you want to make the shapes yourself.

4. Line a baking tray with baking parchment before baking for 10-15 mins until golden brown - ensure gingerbread shapes are spaced out well as they will spread.

5. Once golden and ready, leave to firm up for a couple of minutes before transferring onto a wire rack to cook 

6. Once cooled, decorate with shop bought icing tubes and store in an airtight container until served.

Editor's Tip: We love these little gingerbread biscuits as decorating them is a great way to get the kids involved and having fun. Pierce a hole in the top and thread a string through so you can hang them on the tree or alternatively - just enjoy them with a nice cup of tea!
