Chorizo and potato tortilla free recipe

  • Chorizo and potato tortilla free recipe 
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 chorizo sausage, diced
  • 1 small red onion, chopped
  • 1 small red pepper, deseeded and diced
  • 4 cooked new potatoes, sliced
  • 4 medium eggs
  • 1 handful fresh basil and flatleaf parsley, shredded
  • Salt and freshly ground black pepper


Prep time: 10 mins Cook time: 10 mins Serves: 2-4

1. Heat the oil and butter together in an omelette pan, and when the butter has melted, add the chorizo, onion and red pepper. Cook gently together until the pepper and onion are soft and the chorizo is beginning to crisp. Add the new potatoes and stir everything together well.

2. Whisk the eggs with the herbs and plenty of seasoning just enough to break the eggs down, but don’t overwhisk.

3. Pour the egg mixture into the pan and heat gently, pulling the cooked edges in towards the middle every now and again and spreading the uncooked egg out towards the rim of the pan.

4. Once the tortilla is set, place the pan under a hot grill for a couple of minutes to finish cooking the top – you want a nice golden crust. Garnish with basil and flat-leaf parsley. Serve immediately with a green salad.

You can make this up to two days in advance–then store wrapped in clingfilm in the fridge.
